Ingredients – 1 large sweet potato, 1 large courgette, 1 large onion, 1 yellow pepper, 1 cup of sweetcorn, 75g grated cheddar cheese, 6 trimmed bacon rashers, oil spray.
To make –
Preheat the oven to 200C.
Peel, wash and slice the sweet potato into large circles. Place on a lightly oiled baking tray and spray the top with oil. Roast in the oven for 15 minutes.
Whilst the sweet potato is roasting, cut the fat off the bacon and lightly fry in a pan. Once cooked, cut into small pieces.
Wash and slice the courgette, yellow pepper and onion. Add the sweetcorn to a bowl, cover with boiling water and put in the microwave for 2 minutes and drain.
Remove the baking tray from the oven and arrange all the vegetables on top of the sweet potato. Then put the bacon on top, and cover all of the ingredients with cheese.
Cover with foil and bake for a further 30 minutes.
