A very simple, tasty recipe!
Ingredients – boneless chicken thighs x 4, large courgette x 1, garlic cloves x 4, mushrooms x 8, red pepper x 1, 8 cherry tomatoes, oil spray, Cajun spice.
Preheat the oven to 200C
Wash and chop up all the vegetables into big chunks. Cut the garlic up into chunks.
Add to a mixing bowl and spray the vegetables with oil. Add 1 tablespoon of Cajun spice and mix into all the vegetables until they are well coated.
Place the chicken thighs onto the baking tray. Coat each one with Cajun spices.
Add the vegetables to the baking tray.
Place the tray on the middle shelf of the oven and roast for 40 minutes. Mix the vegetables half way through and cover the tray with foil for the remaining 20 minutes.
Serve with rice.
