Rich Roasted Vegetable, Garlic and Bacon Bolognese

 

Ingredients – Lean Bacon (or cut off the fat), 1 green pepper, 2 onions, 1 yellow pepper, mushrooms, 3 gloves of garlic, 1 tin of chopped tomatoes, 2 tbsp tomato purée and 1 tsp of dried herbs, cooking oil spray.

To make:

Preheat the oven to 190c.

Chop all the vegetables into chunks and put them into a bowl. Spray with a cooking spray and add crushed garlic. Mix it all together. Lightly spray a baking tray, evenly spread out the vegetables on the tray and cover with foil. Roast for 15 minutes, then remove foil and continue roasting for another 10 minutes.

Whilst the vegetables are roasting cut the bacon up into chunks and lightly fry in a pan.

Then add the roasted vegetables and mix together with bacon. Add a tin of chopped tomatoes, tomato purée and parsley. Heat through.

Serve with pasta. I also added a sprinkle of parmesan cheese on the top.

Delicious!
