A really delicious filling meal made with cod in a mild cheese sauce.
Ingredients – Cod fillets x 4, potatoes x 8 medium, 700ml skimmed milk, 100g cheddar cheese, 1 medium egg, 3 tbsp plain flour, fish seasoning, black pepper, 1/2 cup sweetcorn, 1/2 cup peas, 1 cup of sliced carrots.
Preheat the oven to 180C.
For the sauce:
Blend together 600ml skimmed milk, 1 egg, 3 tbsp plain flour, 70g grated cheese and black pepper to your taste. Heat in a pan until thickened.
Peel, wash and chop the potatoes, boil until soft. Drain and mash. Add 100ml skimmed milk. Mash until smooth.
Peel, wash and slice carrots, boil until soft and drain. You could also use frozen or tinned carrots.
The fish – Poach the fish fillets. Drain and put them into a large dish. Break up the fish into chunks, season well with fish seasoning and spread evenly on the bottom of the dish.
Add the sauce to the fish. Add frozen peas and sweetcorn. Add the carrots. Mix into the sauce.
Spread the mashed potato over the top of the filling.
Using an olive oil spray, spray the top of the mashed potato generously.
Sprinkle the remainder of the grated cheese over the top of the dish.
Place in the oven and cook for 25-30 minutes, or until you can see the sauce bubbling and the top of the dish is golden.
